The wine
This wine comes from a single vineyard, whose vines grafted on the old Rupestris Du Lot rootstock produce a grape with more concentration.
Extremely complex Soave Classico with a great character.
A touch of new barriques, well integrated, raises it to a contemporary dimension and enhances its personality.
The vineyard is in the Classic area, on the Monte Foscarino: Basaltic-volcanic soil and southwest exposure of the vines.
Characteristics
100% Garganega: this variety was introduced in the Classic area 2,000 years ago by the Romans.
Selection of the most concentrated grapes coming from the vineyards with southwest exposure.
Fermentation in 30% new barriques and 70% not new. Then it stays on the lees 6 months with batonnage every 6 weeks. Then fining for 6 months in stainless steel vats on the fine lees.
Combinations
Pairs with many dishes with intense flavor, such as scallop and shellfish, and Asian recipes, such as tempura.
With local tradition dishes: Linguine with scampi, spaghetti with bottarga, bigoli with sardine or duck, risotto with saffron (alla Milanese).
With vegetables: Ratatouille, peperonata, eggplant parmigiana
